Mussels can be steamed or used in prepared dishes ranging from the simple to the complex. They can stand up to sauces and preparations with intense flavors. This makes them one of the most versatile and delectable shellfish alternatives.
Handling Mediterranean Mussels
Keep mussels under refrigeration and cover them with a clean wet towel to prevent them from drying out. Mussels are best shipped with their beards attached, as removing the beards drastically shortens shelf life. Beards should be removed just before cooking.
