SMALL PACIFIC OYSTERS

Just as deliciously mild in flavor as our other Pacifics. And just like the larger sizes, the shell characteristics make them ideal for all your cooking or half-shell needs.
Size: 3-4 inch shell
Serving Suggestion
Excellent for the half-shell and served with a glass of chilled dry white wine. Make sure to chill your oysters to the same temperature as the wine to get the best of both flavors.
Handling Small Pacific Oysters in the Shell
Live Oysters are best eaten within a week of harvest. They are best kept alive by placing them in an open container in a refrigerator (34Â° - 45Â° F) and covering them with a clean wet towel to prevent them from drying out. Do not keep them in a bucket of sea water, in plastic bags or other air tight containers. Our oysters can be frozen shucked or in the shell, but their texture will usually suffer.
